Total cooking time: 6 minutes. For 4 servings you will need: 1/2 tsp. salt 1/4 to 1/2 tsp. black pepper 2 tbsp. olive or salad oil 2 tbsp. butter 3 tbsp. chopped fresh chives or green onions Juice of 1/2 lime or lemon 2 tbsp. brandy or Cognac (optional) 3 tbsp. parsley, chopped 2 tsp. Dijon-style mustard 1/4 c. chicken broth
Place chicken breasts between sheets of waxed paper or plastic wrap. Pound slightly. Sprinkle with salt and pepper. In a microsafe dish, melt butter and mix with oil, place chicken breasts in dish, coating on both sides. Microwave at High for 3 minutes, let rest for 1 minute. Turn breasts over, microwave again at High for 3 minutes until chicken breasts are done, not over cooked. Set aside. Prepare sauce by mixing chives or green onions, lime or lemon juice and brandy. If desired mustard and parsley in a microsafe dish. Add juices from chicken and broth. Stir until smooth. Pour sauce hot over chicken breasts. Serve immediately with noodles.
