1 1/4 lb. turkey breasts
1/2 c. dried bread crumbs
1/4 c. olive oil
1/4 c. fontina cheese
Salt & pepper
1 egg, beaten
1/4 c. butter
1/4 c. Parma ham
1 tsp. thyme
Italian seasoning crumbs are much better.
Divide the turkey breasts into 4 escallops, flatten with scutlet bat, add to the beaten egg and leave to soak for 30 minutes.
Preheat the oven to 350 degrees.
