1 1/2 c. cooked chicken in chunks 1 (8 oz.) can whole kernel corn, drained 2 med. tomatoes in wedges 1 med. green pepper, thinly sliced 1/2 c. mayonnaise 1/2 tsp. salt 1 tsp. chili powder 1/4 tsp. pepper 1 tbsp. lemon juice Lettuce leaves 2 hard boiled eggs In medium bowl place chicken, corn, tomatoes and green pepper. Blend mayo, salt, chili powder, pepper and lemon juice. Add mayo mixture to chicken mixture toss together. Place on lettuce lined plate with quartered eggs around sides of dish. Refrigerate until served. Makes 4 to 6 servings. |
