1/2 c. flour 1/2 c. seasoned dry bread crumbs 1 tsp. paprika 1/2 tsp. garlic powder Salt, pepper 4 boneless chicken breast halves 1/4 c. vegetable oil 1/2 c. orange marmalade 1/4 c. orange juice Combine first 4 ingredients. Season with salt and pepper. Dredge chicken in flour mixture. Shake off excess. Heat oil in skillet over medium high heat. Brown chicken. Remove from pan and add marmalade and juice. Boil until slightly decreased in volume. Place chicken in a casserole. Pour sauce over and bake at 350 degrees (uncovered) for 25 to 30 minutes. Serves 4. |
