CHICKEN IN A POT
 

3 chicken breasts, skinless, cut into strips
5 button mushrooms, quartered
2 large carrots, chopped
1 large red onion, diced
6 small potoatoes, roughly cubed
1/2 cup corn kernels
1/2 cup peas or beans
salt & pepper to taste
1 vegetable stock cube
mixed herbs to taste
1 tablespoon lemon juice
2 cups water
thickener (flour, cornstarch, etc)
1 435g tin condensed milk, light
1 tablespoon corn flour

Put everything except for the condensed milk, corn flour and thickener into a large pot.

Bring to the boil, reduce heat. Add flour or cornstarch if more thickness is desired.

Simmer for 30 minutes or until potatoes are cooked.

Mix corn flour into the condensed milk.

Add to the pot.

Stir until thickened.

Serve with rice.

Serves 4 - 6 hungry people.

Note: Add a pinch of sage and a few minced cloves of garlic for extra flavor. Submitted by: 17stddrinks
