2 game hens, halved
10 oz bottle teriyaki sauce
1 tsp cayenne pepper
1 clove garlic, crushed
juice of half a lemon
1/2 tsp lemon zest

Wash game hens and place in a large plastic bag. Mix the remaining ingredients and pour over the hens. Marinate for 8 hours.

Heat one side of gas grill to medium. Place hens on the grill over the unlit burners (off the heat so they will cook indirectly). Cover and grill.

Turn hens every 15 minutes for one hour or until juice at thigh runs clear.
