MAYONNAISE FOR LETTUCE OR POTATO SALAD
 

2 eggs, beaten
3/4 c. sugar
2 1/2 tbsp. flour
1/8 tsp. salt
1 1/2 c. boiling water
2 tbsp. prepared mustard
2 tbsp. mayonnaise
2 tbsp. vinegar

Start in the pan in which to be cooked. Add eggs, sugar, flour and salt. Slowly add water to egg mixture. Bring to boil, stirring constantly. Cool. Add mustard, mayonnaise, vinegar and mix well. Makes 1 pint. Can be kept in refrigerator in covered container for weeks.
