SCALLOP POTATO & HOT DOGS (Can use
ham)
 

6 med. potatoes, peeled & sliced
1 onion, chopped

Place potatoes, the onion and enough water to cover in large saucepan. Cook until tender. Melt 1/4 cup butter. Add 1/4 cup flour. Stir until smooth. Add salt and pepper. Add 2 cups milk and 1 1/2 to 2 cups cubed Velveeta cheese, stir until cheese melts and the sauce is thickened. Add diced ham or 1 package hot dogs cut into chunks. Heat through. Drain potatoes and onion. Place potatoes and onion in baking dish. Add sauce and mix to distribute the meat. Bake at 350 degrees for 25-30 minutes.
