2 1/4 lbs. potatoes
1/3 c. cider vinegar
1/4 c. corn oil
2 tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
4 hard cooked eggs, chopped
1/8 c. finely chopped onion
2 tbsp. minced parsley
1/2 c. mayonnaise
Cook washed unpared potatoes in boiling salted water just until tender. Meanwhile, in a small mixing bowl, with a fork beat together the vinegar, oil, sugar, salt, and pepper; set aside but beat together again just before using.
As soon as potatoes are tender, drain and remove skins; slice into a bowl. While potatoes are still hot, add egg, onion, and parsley and toss lightly. Immediately, our oil mixture over potatoes but do not toss. Let marinate at room temperature for 1 hour. Add mayonnaise and toss lightly. Makes 6 (1-cup) or 8 (3/4-cup) servings.
