3 sq. unsweetened chocolate
3 tbsp. butter
1/3 c. mashed potato
1/8 tsp. salt
1 tsp. vanilla
1 lb. sifted powdered sugar

Melt chocolate and butter over water. Add potatoes, salt and vanilla. Mix well. Blend in sugar and mix thoroughly. Knead until smooth and press into 8 inch buttered pan. Cool and cut. Makes 1 1/4 pounds fudge.
