MASHED POTATO COFFEE CAKE
 

Put 1 package yeast and 1 tablespoon sugar into 1 cup milk, scalded and cooled. Add 1 cup mashed potatoes and 2 cups flour. Stir well and let rest 1/2 hour. Then add: 2 well beaten eggs 1 c. sugar 2 1/2 c. flour 1/2 tsp. salt

Knead well. Let rise until doubled. Punch down. Divide into 3 coffee cakes. Knead a little more. Form into round loaves and let rise until doubled. Dot with butter and sprinkle with a sugar/cinnamon mixture. Bake at 375 degrees for 20 to 25 minutes.
