1/4 c. melted butter 1 1/2 c. sugar 1 c. seasoned hot mashed potatoes 2 eggs, beaten 4 c. flour 5 tsp. baking powder 1 tsp. salt 1 tsp. nutmeg 1/2 c. milk Confectioners' sugar Cream butter and sugar. Blend in mashed potatoes, then eggs. Sift together dry ingredients twice. Add to first ingredients alternately with milk. Chill dough 2 hours. Roll to 1/2 inch thick. Cut with doughnut cutter. Fry in deep fat 360 degrees for 1 minute on each side, drain on towelling. Sprinkle with sugar or ice. |
