DILL PICKLE POTATO SALAD
 

6 med. size potatoes, boiled in skins
1/4 c. finely chopped Polish dill pickles
6 chopped hard boiled eggs
2 stalks finely chopped celery
1 sm. onion, chopped fine
1 sm. jar pimientos, drained & chopped up
1 tbsp. yellow mustard (more if desired)
Miracle Whip salad dressing (approx. 3/4 - 1 c.)
Salt & pepper to taste

Peel the potatoes and cut them into bite size cubes. Mix all ingredients, except Miracle Whip, in a large bowl. Add enough of the Miracle Whip salad dressing to moisten the rest of the ingredients or to your personal taste. Refrigerate salad until thoroughly chilled and flavors are blended. Recipe should serve 6 or 7 people.
