4 tbsp. cornstarch 1 c. sugar 2 tsp. cream of tartar 1/4 tsp. salt 2 egg yolks 2 c. boiling water 1 tsp. butter 2 tsp. lemon extract 1 baked crust Mix first 4 ingredients with a bit of cold water. Stir in egg yolks and add boiling water and butter. Boil 2 minutes, stirring. Cool and add 2 teaspoons lemon extract. Pour into baked crust. Make meringue with the 2 egg whites. Brown in slow oven. |
