CREME DE MENTHE ICE CREAM PIE
 

CRUST:

2 c. chocolate cookie crumbs
1/4 c. coconut
1/4 c. butter

FILLING:

1 qt. vanilla ice cream
1/4 c. creme de menthe or creme de cacao
3 egg whites
3/4 c. sugar

CRUST: Mix well and press into pie pans. Bake at 350 degrees for 5 minutes.

FILLING: Mix creme de menthe and softened ice cream well and put into pie crust and freeze. Beat egg whites with sugar until stiff. Pour on pie and bake at 500 degrees for 4 to 5 minutes and then freeze again until ready to serve.
