PECAN PIE SURPRISE BARS
 

1 pkg. (18 1/2 oz.) "Pillsbury" butter or yellow cake mix (reserve 2/3 c.)
1/2 c. butter, melted
1 egg
1 c. chopped pecans (sprinkle over bars or mix in with filling mixture)

Grease bottom and sides of a 15 x 10 x 1 inch jelly roll pan. Reserve 2/3 cup dry cake mix for filling. In a large mixing bowl, combine remaining dry cake mix, butter and egg until crumbly or mixed and spread in pan. Press into prepared pan. Bake at 350 degrees for 15 to 20 minutes until lightly brown. Meanwhile, prepare filling.

FILLING:

2/3 c. reserved cake mix
1 1/2 c. dark corn syrup
1/2 c. brown sugar, packed
1 tsp. vanilla
3 eggs

Mix all ingredients well. Then add the 1 cup pecans (or sprinkle on top). Pour filling over partially baked crust. Return to oven and bake 30 to 35 minutes (or until filling is set). Cool. Cut into bars.
