PEACH COBBLER
 

2 c. canned sliced peaches, drained
1 tbsp. corn starch or flour
1/2 c. sugar
1/4 tsp. salt
1/2 c. peach juice
1 c. sifted all purpose flour
1 1/2 tsp. baking powder
1/4 c. shortening
1/4 c. sugar
1/4 c. chopped almonds (optional)
1/3 c. milk

Place peaches in separated 6 x 10 inch baking dish. Sprinkle corn starch over fruit. Combine sugar, salt and peach juice and pour over peaches. Meanwhile make cobbler dough. Sift flour, baking powder and sugar together. Cut in Spry fine. Add almonds and mix well.

Add milk, stirring with fork into soft dough. Drop dough by small spoonfuls on peaches and sprinkle with sugar, if desired. Bake in moderately hot (375 degree) oven for 40 to 45 minutes. Serve warm with cream.

Cherry Cobbler: Use canned red pitted cherries and cherry juice instead of peaches and peach juice.
