BLACKBERRY COBBLER
 

2-3 c. fresh or frozen blackberries, peaches or apples
1 tbsp. cornstarch
4 tbsp. butter
3/4 c. sugar
1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
3/4 c. sugar
1/4 tsp. salt
1 tbsp. cornstarch
1 c. boiling water

Arrange blackberries in bottom of a greased pan (approximately 10 x 6 x 2 inches). If using frozen berries, sprinkle with 1 tablespoon cornstarch. Cream butter with 3/4 cup sugar. Sift together flour, baking powder and 1/2 teaspoon salt. Add to creamed mixture alternately with milk in three or four additions. Beat until smooth. Spread batter over the fruit. Mix the remaining 3/4 cup sugar, 1/4 teaspoon salt and 1 tablespoon cornstarch. Sift the mixture over the batter. Pour boiling water over all. Bake at 325 degrees for 50 to 60 minutes. Makes 6 servings. Can be doubled. Use a 9 x 15 x 2 inch pan.
