SHINY TOP COBBLER
 

5 c. fresh or frozen blackberries
1 1/2 tbsp. lemon juice
2 c. flour
3 c. sugar
2 tbsp. cornstarch
1 c. milk
1/3 c. softened butter, cut in pieces
2 tsp. baking powder
1 tsp. salt
1 1/2 c. boiling water

Spread berries in well greased 2 1/2 quart shallow baking dish. Sprinkle with lemon juice, set aside. In medium bowl stir flour, 1 1/2 cup sugar, milk, butter, baking powder, and 1/2 teaspoon salt until well blended, will be thick. Spoon over berries, spread to edges of dish, set aside. In small bowl mix remaining 2 1/2 cups sugar, cornstarch, and 1/2 teaspoon salt. Sprinkle over batter. Pour boiling water over all. Bake in preheated 350 degree oven for about 1 hour or until golden brown and glazed. Yield: 12 servings. Blueberries, cherries or rhubarb can be used also.
