SIMPLE AND SKINNY CHEESECAKE PIE
 

1 (8 oz.) pkg. cream cheese
2 c. skim milk (or 1 1/2 c. milk and 1/2 c. water)
1 pkg. lemon pudding mix (instant)
1 1/2 c. graham cracker crumbs (about 18)
3 tbsp. butter

FILLING: In blender, beat cream cheese and 1/2 cup milk until smooth. Add pudding mix and rest of milk, beat at low speed for 1 minute.

CRUST: Mix crumbs and butter and press into 8 inch pie pan.

Pour in filling and chill for 2 hours before serving.
