2 c. frozen blueberries, thawed & drained 7 1/2 c. sugar Juice of 1/2 an orange 2 tbsp. cornstarch 7 baked 8" pie shell 7 1/2 c. fresh blueberries Cook thawed blueberries in 1 1/2 cups of water for 5 minutes. Add sugar and orange juice; cook for 5 more minutes. Combine cornstarch and 1/4 cup cold water in a bowl; mix well. Add cornstarch mixture to blueberry mixture, stirring until thickened. Remove from heat; cool slightly. Pour into pie shell. Cover with fresh blueberries. Serve cold with ice cream and whip cream. |
