CRUST: 1 1/4 c. graham cracker crumbs 1 stick melted butter 2 tbsp. sugar FILLING: 1 lb. ricotta cheese 3/4 c. sugar 1 tsp. almond extract 1 c. chilled, toasted almonds, chopped 1/2 c. semi sweet chocolate chips, chopped 1 1/4 c. heavy cream, whipped & stiff Mix crust well, press into 9" pie plate. Chill. Combine cheese, sugar and almond extract. Mix well and chill. Fold almonds and chips into cheese mixture. Don't over stir. Fold in cream 1/2 at a time. Spoon into crust and smooth top. Chill several hours. |
