3 1/2 lbs. firm, fresh, med. size cucumbers, unpeeled & well washed Salt Water 5 c. white vinegar 5 c. sugar 1 tbsp. whole pickling spice Use salt and water to make brine. Place cucumbers in a deep bowl. Cover cucumbers with brine water and let stand 2 days. Drain and rinse cucumbers with running water. In a pot, combine sugar, vinegar and pickling spice. Place on medium heat. Bring to a boil to dissolve sugar. Add sliced cucumbers to syrup. Remove cucumbers from syrup after a few seconds. Pack cucumbers into clean hot jars. Fill jars with hot vinegar sugar solution. |
