7 lbs. cucumbers 3 c. plain lime 5 lbs. sugar 3 pts. vinegar Pickling spice 1 tbsp. white mustard seed Green food coloring Slice cucumbers crosswise. Cover with solution of water and plain lime (3 cups). Soak for 24 hours. Keep covered with solution. Rinse 4 times (let set for 1 hour in clear water each time rinsed). Heat sugar and vinegar (make syrup). Add few drops green food coloring. Pour over cucumbers and let stand 24 hours. Add pickling spice tied in bag and mustard seed. Boil for 1 hour. Seal in jars. |
