DILLED PICKLED CUCUMBER CHIPS
 

For 3 pints cucumber chips you will need: 1/2 c. salt 4 c. each distilled white vinegar and water 3 c. sugar 6 whole cloves 1/2 tsp. each nutmeg and yellow mustard seeds 2 tbsp. dill seeds

Wash cucumbers and cut into 1/4 inch slices. Put in large bowl and sprinkle with the salt. Cover with 2 quarts water. Let stand 2 to 3 hours. Drain thoroughly. Put 2 cups each of the vinegar and water in kettle or Dutch oven. Bring to boiling. Add cucumber slices. Bring to boiling again and simmer, uncovered, for about 5 minutes. Drain. In same kettle bring sugar, remaining vinegar and water, cloves, nutmeg, mustard and dill seeds to boiling. Simmer for 10 minutes. Pour over cucumber slices. Cover and let stand in cool place for 48 hours. Store, covered in jars in refrigerator. Or bring to boiling fill hot jars, cover and process in boiling water bath for 10 minutes. Remove from water and store in cool, dry place.
