MANICOTTI
 

6 tbsp. oil
1/4 tsp. clove garlic
1 med. onion, diced
2 tbsp. chopped parsley
1/2 tsp. basil
1 qt. tomatoes
1 (16 oz.) can tomato sauce
1 tsp. salt
Dash of pepper
1 tsp. sugar

Saute onions in oil. Add remaining ingredients; simmer 20 minutes.

MEAT FILLING:

2 tbsp. oil
2 tbsp. chopped onion
2 tbsp. green pepper
1/4 lb. Italian sausage
1/4 lb. pork sausage
1/2 lb. ground beef
1 slice soft bread crumbs
1/4 lb. Mozzarella cheese, grated
1/2 tbsp. chopped parsley
1/2 tsp. salt
Dash of pepper

Saute first 6 ingredients. Drain excess fat and cool. Add remaining ingredients. Mix with hands. If dry, add some manicotti sauce.

CHEESE FILLING:

1 (15 oz.) Ricotta cheese
1/4 lb. Mozzarella cheese, grated
1 tbsp. chopped parsley
3 tbsp. grated Parmesan cheese
2 tsp. sugar
1 lightly beaten egg
Salt, pepper to taste
1 box manicotti shells

Mix all ingredients well.

Pour some sauce in 9 x 13 inch pan. Stuff hard manicotti shell with meat filling and 1/2 box of shells with cheese filling. Arrange stuffed shells in pan and pour remaining sauce over shells. Cover with aluminum foil. Bake at 400 degrees for 50 minutes. Remove foil; sprinkle with Parmesan cheese. Bake, uncovered, for 10 minutes.
