1 lb. med. shrimp, shelled and deveined 4 cloves garlic, minced 1/2 stick butter 6 green onions, finely chopped 4 tsp. fresh oregano minced or 2 tsp. dried, crumbled 5 tomatoes cored, seeded and coarsely chopped Salt and freshly ground pepper to taste 1 lb. pasta (linguini), freshly cooked and drained Combine feta, onion, oregano, tomatoes, salt and pepper in large bowl. Let mixture stand at room temperature for at least one hour. Melt butter in saute pan; lightly brown garlic then add shrimp and toss until pink. Combine shrimp mixture with cooked pasta and toss lightly. Top with feta mixture on plate and serve with a shaker of Parmesan cheese. |
