BOURBON SWEET POTATOES
 

4 lb. sweet potatoes or yams
1/2 c. butter, softened
1/2 c. bourbon
1/3 c. orange juice
1/4 c. firmly packed light brown sugar
1 tsp. salt
1/2 tsp. apple pie spice
1/3 c. chopped pecans

Scrub potatoes. Cook, covered, in boiling salted water in large saucepan about 35 minutes or until tender. Place potatoes in large bowl and mash. Add butter and butter, bourbon, orange juice, brown sugar, salt, spice, and beat until fluffy.

Spoon into buttered 6 cup baking dish, sprinkle nuts around edge. Bake at 350 degrees for 45 minutes or until lightly browned. Serves 8.
