CREAMY COCONUT CHEESECAKE
 

CRUST:

1 1/2 c. vanilla wafer cookies, crushed
1/3 c. sweet butter, melted (unsalted butter)

FILLING:

24 oz. softened cream cheese
1 c. sugar
3 whole eggs
3 egg yolks, beaten
2 c. flaked, unsweetened coconut, toasted
1 c. whipping cream
1/2 tsp. pure vanilla
2 tsp. Amaretto

Preheat oven to 350 degrees.

Combine crumbs and melted butter, press into bottom of 10" springform pan after spraying with non stick "coating". Bake at 350 degrees for 10 minutes; cool.

Beat cream cheese and sugar until fluffy, add eggs and beaten egg yolks, toasted coconut, whipping cream, vanilla and Amaretto. Beat for 2 minutes at medium speed. Pour into crust. Bake at 350 degrees for 1 hour and 15 minutes.

Let cool completely and remove from pan carefully. Eat slowly and enjoy. Serves 10.
