BEEF AND GREEN ONIONS WITH MUSHROOMS
 

For 4 servings you will need:

1 1/2 lb. stewing beef, cut into 2-inch pieces
Salt & pepper to taste
1 tbsp. olive oil
1 lb. mushrooms, quartered
1 c. sliced green onions
1 tbsp. minced garlic
2 tbsp. tomato paste
1/2 tsp. dried thyme leaves
3/4 c. beef broth or water
1/4 c. red wine
3/4 c. tomato puree
1 tomato, chopped

Place the beef in a microsafe dish. Sprinkle with salt, pepper and oil.

Microwave at HIGH power for 3 minutes. Remove. Set aside.

Add quartered mushrooms to microsafe dish.

Microwave at HIGH power for 3 minutes. Remove mushrooms.

Mix all remaining ingredients in a bowl. Add mushrooms.

Place beef in microsafe dish again. Pour all ingredients over. Stir to blend.

Microwave at MEDIUM HIGH power for about 12 minutes, stirring halfway through cooking time.

Serve over rice or noodles. Sprinkle with chopped tomato.

REMEMBER: Cooking time depends on how tender the beef cubes are. Don't over cook or they will turn very hard and tough.
