Blend in microwave bowl (2 quart size) : 2 c. packed brown sugar 2 tbsp. cornstarch Add to above and whisk: 3/4 c. orange juice 3/4 c. white wine 3/4 white rum Add to above and microwave on high 8 to 10 minutes, whisking every 3 minutes until boiling and thickened: 1/2 c. (8 tbsp.) butter Refrigerate, if preparing ahead. Allow 1/2 cup sauce, 1/2 large banana and 1/2 cup vanilla ice cream per serving. Measure sauce and bananas and warm on high 45 seconds to one minute per serving or 130 degrees, if using microwave probe. Serve warm sauce over ice cream. Optional: serve whipped cream over top. Yield: 6 or 7 servings. |
