GROUND BEEF - FILLED SQUASH
 

3 fresh acorn squash
1 lb. ground beef or ground turkey
1/2 c. herb-seasoned stuffing mix
1 tbsp. minced fresh parsley
2 tbsp. minced fresh onion
1 tsp. salt
1/2 tsp. pepper
3/4 c. beef bouillon
1/2 c. fresh sliced mushrooms

Cut the squash in half lengthwise and remove the seeds. Place cut side down in baking pan and add 1/4 inch boiling water. Bake 30 minutes or until almost tender in 350 degree oven. (Microwave 5 minutes, using appropriate pan.)

Saute ground meat until crumbly. Add stuffing mix, parsley, onion, salt, pepper and bouillon, toss lightly to combine. Turn cooked squash upright and fill with meat mixture. Return to oven and bake another 20 to 30 minutes. (Microwave approximately 10 minutes.) Saute mushrooms and arrange on top. Serves 6.
