HAM AND CHEESE QUICHE
 

Pastry for 9" pie pan
2 c. (8 oz.) cheddar cheese, shredded
1/3 c. onion, finely chopped
1/3 c. green pepper, finely chopped
1 1/2 c. ham, cooked and diced
1/3 c. flour
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. milk
3 eggs, beaten

Sprinkle half the cheese in the pastry shell. Top with half the onion and green pepper, then half the ham. Repeat. In a bowl, combine flour, salt and pepper. Add to the milk and beaten eggs. Mix well and pour over pie. Bake at 350 degrees for 60 minutes or until knife comes out clean when inserted in the middle. Serves 6 to 8.
