BARBECUED SPARERIBS FOR FIFTY
 

50 lbs. pork loin spareribs, cut into 3-rib portions
3 c. vinegar
2 tbsp. salt
3 tbsp. dry mustard
1/2 c. celery seed
1/4 c. chili powder
3 qts. catsup
2 c. sugar
8 tsp. paprika
8 tsp. pepper
1 1/2 liquid smoke

Place ribs, meaty side up, in 2 layers in 10 baking pans, 13 x 9 1/2 x 2 inches. Bake uncovered in a hot oven (400 degrees) for 45 minutes, or until well browned. Pour off all fat.

While ribs are browning, combine remaining ingredients and simmer for 30 minutes. Pour one cup sauce over browned ribs in each pan. Bake in a slow oven (325 degrees) for 1 hour. Pour remaining sauce over ribs, and bake 1/2 hour longer, or until tender.
