SAUSAGE CORNBREAD STUFFING
 

2 tbsp. salad dressing
1 med. bell pepper
2 onions (1 med. and 1 lg.)
1 sm. pkg. Pepperidge Farm stuffing mix
1 box Jiffy cornbread mix
2 tbsp. poultry seasoning
Thyme
Sausage
Poultry giblets

Chop onions and bell pepper. Simmer half of onions with poultry giblets that have been seasoned to taste. Make cornbread according to directions on box. Crumble and cook sausage. Drain well. Saute remaining onions and bell pepper in butter. Pour stuffing mix in large bowl and crumble in cornbread. Add minced giblets and broth, onions, and bell pepper, poultry seasoning and thyme (to taste) and toss well. Make sure all cornbread and stuffing mix is well moistened. Stir in salad dressing. Add sausage and stir well. Place in baking dish and bake 35-40 minutes at 350 degrees.
