SAUCY APPLE PORK CHOPS

6 pork ribs or loin chops, cut 3/4 inch to 1 inch thick
3 tbsp. drippings
1/8 tsp. pepper
2/3 c. applesauce
1/3 c. golden raisins
1/3 c. water
1 1/2 tsp. salt
1 (14 oz.) jar spiced apple rings
1 tsp. lemon juice
1 tbsp. cornstarch

Brown pork chops in drippings in Dutch oven or ovenproof skillet. Pour off drippings. Season chops with salt and pepper. Drain apple rings, reserving juice. Combine apple juice, applesauce and lemon juice. Stir in raisins. Cover and cook in a 350 degree oven for 1 hour or until chops are tender. Arrange chops on a hot platter.

Combine cornstarch and water and use to thicken apple liquid for gravy. Add spiced apple rings. Continue cooking for one minute. Serve gravy over chops. Makes 6 servings.
