BEEF BRISKET
 

2-4 lb. beef brisket
Brown sugar
1 can whole cranberry sauce
1 env. dry onion soup mix
1 tbsp. tomato paste
3/4 c. sherry or wine

Place brisket fat side down, salt and pepper. Sear the brisket in hot oven for 10 minutes. Take out of oven and sprinkle with brown sugar on top of brisket (enough to cover). Mix together: cranberry sauce, onion soup mix, 2 tablespoons tomato paste and sherry or wine in small bowl. Pour over brisket and cover. Bake at 300 or 325 degrees for 2 1/2 hours or until tender (the longer it's cooked the more tender it becomes).
