BEEF STROGANOFF
 

1-1 1/2 lbs. beef tenderloin
1-2 onions
8-10 med. size mushrooms
4-5 tbsp. butter
Salt and pepper
1 c. sour cream
Grated nutmeg

Cut beef into strips about 2 1/2 inches long and 1/2 inch thick. Slice onions and mushrooms finely. Melt 2 tablespoons butter in frying pan; cook onions slowly until golden brown. Remove from pan; keep warm.

Add a little more butter; cook mushrooms about 5 minutes. Add to onions. Melt remaining butter. When foaming, put in about half the strips of steak. Fry quickly, about 5 minutes, until brown on all sides.

Remove; repeat with remaining steak. Replace all meat and vegetables in pan; shake over heat. Add salt and pepper, nutmeg and sour cream. Heat until it nearly boils. Serve over rice or noodles.
