GRILLED PORK SCALLOPINI
 

1 lb. pork tenderloin
all purpose flour
1 egg
1 tbsp. water
1/2 c. seasoned dry bread crumbs
2 tbsp. butter
1 med. carrot, diced
1 (12 oz.) jar homestyle brown gravy
3 tbsp. half and half or milk
1 tsp. lemon juice
1/2 tsp. dried dill weed
1 tbsp. dairy sour cream

Cut pork crosswise into 12 slices, flatten to a 1/4 inch thickness. Dust pork lightly with flour. Combine egg and water; dip pork into egg mixture, then coat with crumbs. In large skillet, saute pork in butter a few pieces at a time about 3 minutes per side or until golden brown. Add more butter if necessary. Keep pork slices warm while preparing sauce. For sauce, saute carrots in the same skillet until tender crisp, about 1 to 2 minutes. Stir in gravy and next three ingredients. Heat. Stir sour cream into sauce just before serving.
