2 bottles liquid smoke 9 lbs. or more beef brisket Worcestershire sauce Garlic powder Onion salt or powder Celery salt or powder Sprinkle the liquid smoke over meat. Add to personal taste the garlic, onion and celery powder or salt. Sprinkle with Worcestershire sauce. Cover and let sit overnight. Bake in the liquid, covered with foil, in 250 degree oven for 6 hours. Drain liquid and fat. Cover with barbecue sauce. Put back in oven for 1 hour more. BARBECUE SAUCE: 1 (26 oz.) bottle catsup 1 sm. onion, chopped fine 1/4 c. vinegar 1 c. brown sugar 1/4 tsp. garlic powder 2 tbsp. Worcestershire sauce 1 c. water Heat together sauce ingredients to blend before using on meat. Can half this recipe. |
