SAGE PORK ROAST
 

3 1/2 - 4 lb. boneless pork loin
Salt
1 tsp. soy sauce
1/2 tsp. crushed dry sage
1/2 tsp. black pepper
4 c. potatoes, cut in 1/4" slices
Garlic (opt.)

Preheat oven to 325 degrees. Roll and tie loin. Put into roasting pan. Combine 1/2 teaspoon salt, soy sauce, sage and pepper. Rub into roast. Bake 1 hour 45 minutes. Parboil potatoes 5 to 6 minutes in lightly salted water. Drain well. Remove roast. Arrange potatoes around meat, sprinkle lightly with garlic salt and baste with pan drippings. Return to oven. Bake 30 minutes longer. Discard string and cut meat in thin slices. Serves 8.
