CURRIED BEEF DINNER
 

1/2 lb. fresh mushrooms, sliced
1/2 c. chopped onion
2 tbsp. butter, melted
2 tbsp. all purpose flour
2 c. beef broth
3 lbs. lean, boneless beef, cut in 1/2 inch cubes
2 tbsp. bacon drippings
1/2 tsp. curry powder
1 tsp. salt
1/4 tsp. pepper
Hot cooked rice
Optional toppings

Saute mushrooms and onion in butter; add flour, stirring until smooth. Cook 1 minutes, stirring constantly. Gradually add broth; cook over medium heat, stirring constantly. until gravy is thickened and bubbly. Set aside.

Brown beef in bacon drippings in a heavy Dutch oven. Cover and simmer 10 minutes, stirring occasionally. Add gravy mixture, curry powder, salt and pepper; cover and simmer 20 minutes or until beef is tender.

Serve over rice with several of the following toppings: chow mein noodles, chopped tomatoes, chopped celery, chopped green pepper, chopped onion, shredded carrots, chopped apples, cooked crumbled bacon, raisins, flaked coconut, salted peanuts, toasted slivered almonds, and chutney. Yields 12 servings.
