1 (5 lb.) loin or rib pork roast 1/2 c. brown sugar, firmly packed 1 c. hickory flavored or plain catsup 2 tbsp. prepared mustard 2 tbsp. tarragon vinegar 1 tbsp. Worcestershire sauce 1/2 tsp. salt Roast pork in 325 degree oven for 3 to 3 1/2 hours, until meat thermometer registers 185 degrees. Combine brown sugar, catsup, mustard, vinegar, Worcestershire sauce and salt in a saucepan; cook, stirring occasionally, until sugar is dissolved. About 1 hour before roast is done, baste with sauce. Continue to baste every 10 to 15 minutes. Serve with remaining sauce. |
