BARBECUED PORK TENDERLOIN
 

1 or 2 pork tenderloins (about 1 1/2 lbs. each)
3 tbsp. sherry
3 tbsp. soy sauce
1/4 c. honey
2 slices ginger, minced

Place tenderloin in shallow dish. Combine remaining ingredients and pour over meat. Cover and chill several hours or overnight, turning meat occasionally. Remove meat from marinade and place in baking dish. Cover and bake at 350 degrees for 1 1/2 hours. Uncover and bake 30 minutes. Baste with sauce several times during baking. Cut cross-wise into thin slices. Makes 6 servings.

Tip: Serve with Chinese dishes or serve with scalloped potatoes, tiny green peas, and rolls.
