BARBECUED RIBS
 

4 lbs. pork ribs (spareribs, baby loin back ribs, or country style)
Vinegar Basting Sauce
Barbecue Sauce

If using slabs, cut each crosswise in half. Place ribs in a shallow roasting pan; pour Vinegar Basting Sauce over ribs. Cover with aluminum foil and bake at 300 degrees for 30 minutes for baby loin back ribs or 1 hour for spareribs or country style ribs, basting with vinegar mixture halfway through cooking time.

Drain ribs, discarding basting square. Grill ribs over low coals (275-300 degrees) for 15 minutes, turning after 8 minutes. Baste ribs generously with Barbecue Sauce; grill 8 minutes. Turn ribs; baste again with Barbecue Sauce, and grill 7 minutes or until done. Yields 4-8 servings.

VINEGAR BASTING SAUCE:

2/3 c. water
1/3 c. red wine vinegar

Combine ingredients. Yields 1 cup.

BARBECUE SAUCE:

1 c. catsup
1 c. water
1/2 c. cider vinegar
1/3 c. Worcestershire sauce
1/4 c. prepared mustard
1/4 c. butter
1/2 c. firmly packed brown sugar
1 tsp. hot sauce
1/8 tsp. salt

Combine all ingredients in a saucepan, stirring well. Bring to a boil; cover; reduce heat, and simmer 1 hour. Yields 3 cups.
