BARBECUED PORK CHOPS
 

Marinade pork chops (about 6 or 8) in mixture of 2 tablespoons each: soy sauce, honey, vinegar, sherry or apple juice plus 1 1/2 cups chicken broth. Barbecue until browned on all sides and cooked through. Baste while cooking with Zesty Barbecue Sauce (recipe below).

ZESTY BARBECUE SAUCE: Heat 1/4 cup vegetable oil in heavy pan. Add 1 chopped garlic clove and 2 finely chopped medium onions, cook slowly until tender. Add 3 cups tomato sauce, 1/4 cup cider vinegar, 3 tablespoons brown sugar, 2 teaspoons salt, 1 teaspoon each chili powder and dry mustard, 1/8 teaspoon red pepper sauce and 2 tablespoons soy sauce. Simmer, uncovered for 15 to 20 minutes, stirring occasionally, until sauce thickens.
