6 to 8 lb. ham 1/2 c. brown sugar 1 tsp. dry tarragon 1/2 tsp. dry mustard 1/2 tsp. ground cloves 1/4 c. tarragon vinegar 3 to 4 juniper berries, mashed Preheat oven to 300 degrees. Mix all ingredients and place in a glass roasting dish. Place ham in dish and baste. Cover loosely with foil and bake about 20 minutes per pound. Baste occasionally. Allow to set several hours before slicing. |
