BEEF AND BROCCOLI STIR FRY
 

1 tbsp. cornstarch
2 tbsp. soy sauce
1 lb. beef, cut in strips
1 clove garlic, minced
1/2 c. carrots, thinly cut
1 can water chestnuts, drained and sliced
1/2 c. beef broth
1/4 c. Karo syrup
5 tbsp. corn oil
1/4 c. sliced onions
1/2 c. sliced mushrooms
2 c. broccoli, sliced

Stir in bowl first 3 ingredients until smooth. Add beef, toss to cook. Cover and chill 4 hours. Drain. Reserve marinate. In large skillet, heat 2 tablespoons corn oil over medium heat. Add onions, garlic stir fry 2 minutes. Remove from heat. Add mushrooms to skillet, stir fry 1 minute, remove add 2 tablespoon corn oil, add carrots, broccoli and chestnuts, stir fry 2 minutes. Remove, add 1 tablespoon corn oil, add beef, fry 3 minutes, add broth, stirring constantly. Add vegetables, cook 2-3 minutes. Serve over rice.
