PORK ROAST WITH RUBY GLAZE
 

4-5 lb. boneless pork loin roast (double loin rolled & tied)
2 c. fresh cranberries
1 c. light Karo syrup
1 c. sugar
1/4 tsp. ground cinnamon

Preheat oven to 325 degrees.

Place pork roast on rack in open roasting pan. Insert meat thermometer. Roast for 2 1/2 to 3 hours until thermometer reads 170 degrees. Meanwhile, in 2 quart saucepan over medium heat, bring remaining ingredients to boil, stirring frequently. Boil 2 minutes. Let stand at room temperature. Drain 1/2 cup liquid from cranberry glaze. Brush on pork several times during last 40 minutes of roasting. Serve remaining glaze as sauce for roast. Makes 10 to 12 servings.
