1 lb. side pork, sliced 1/4 inch thick 1 lg. onion 6 med. potatoes 1/2 c. butter Fry side pork until crispy, drain on paper towel. Cook diced potatoes until tender, saute diced onion until tender. Teaspoon dumplings in hot potato pot, cook until done. Drain. Pour sauteed onions over potatoes, dumplings, season to taste. DUMPLINGS: 2 c. flour 1 tsp. salt 2 eggs Little water to make batter Serves 4. Good with applesauce on the side. |
